I have repaired several houses like this. Make sure the joists are not rotted, or have been eaten be termites, and I have also seen mold eat them away. But find someone you can trust to look at it.
I agree with both, if quarter sawn I would repair what I have. It is very hard to find someone to cut quarter sawn and would be expensive, well here in NC.

I currently live in an 1898 victoian cottage, going on the 12 year restoration plan. My dream came true when I was choosen to restore a home on the History Channel with Steve Thomas. I have restored homes as old as 1799.
